Egg Fry

I was really excited from the day I received an invitation from Radhika of Tickling Palates about her new event, Blog Hop Wednesdays. Here, each blogger is paired with another blogger; each one has to prepare a recipe from their paired blogger every alternate wednesday. To know more, click here.

Today, I am paired with Jabeen of Jabeen’s Corner. I got more interested in her chicken recipes when I surfed her place. But I normally prepare Non-veg only during weekends. So I chose this Egg recipe. Normally, I prepare Egg Frywith Sambar Powder or Egg Kuzhambu. I never added Tomatoes to Eggs, this was new to me.

Here is the recipe.

Ingredients:

Eggs 3
Onions (Big) 1
Tomato (Big) 1
Chilli Powder ¾ tsp
Coriander Powder 1 tsp
Ginger-Garlic Paste ¾ tsp
Cumin ¼ tsp
Cloves 2
Salt
Oil

Preparation:

Cut Onions lengthwise. Chop Tomato into 4-6 pieces.

Method:

Boil Eggs. Peel its hard shell and cut into two halves.

Heat Oil in a Pan. Add Cumin and Cloves. When they turn slightly brown, add chopped Onions and Ginger-Garlic Paste. Fry till Onions turn translucent.

Now add chopped Tomatoes. Fry till its raw smell goes off. Now add Eggs. Sprinkle all Powders and Salt over the Onions, Tomatoes and Eggs.

Fry on a low flame till Eggs get a slightly roasted coating of the Powders or till done.

Serves: 2
Serve as a side dish to Rice.
